Prep at home, finish at the tailgate

Check the venue’s grill and fuel rules before choosing the menu. Make-ahead chili needs an on-site reheating source and a reliable way to stay hot. Raw meat, sauce, and other cold toppings need enough cooler space to stay at 40°F or below.

At home

  • Gather the ingredients for your chosen recipes. Pack seasonings, toppings, buns, and serving supplies together so they are easy to find.
  • Prepare burger patties or chicken according to the recipe and refrigerate them. Keep raw meat in sealed containers, separate from ready-to-eat food.
  • If making chili ahead, cool it promptly in shallow containers and refrigerate it. Plan to transport it cold and reheat it at the tailgate.

At the tailgate

  • Keep separate utensils and platters for raw and cooked meat.
  • Put the corn on when you have room on the grill. Add the seasoned butter after cooking, as directed in the recipe.
  • Keep toppings chilled until serving and bring out small portions at a time.
  • Toast buns near serving time and let everyone add their own jalapeĂąos.

Pack the tools, too

Bring a food thermometer, cooler thermometer, plenty of ice or frozen gel packs, clean tongs, serving spoons, clean platters, bowls, napkins, and trash bags. Include water and supplies for cleaning hands and surfaces if the site has no running water.

Use temperature, not appearance, for doneness

Use a food thermometer: ground beef and pork need to reach 160°F; chicken and ground turkey need 165°F. Color and grill marks do not tell you whether meat is done.

Keep cold food at 40°F or below and hot food at 140°F or above. Reheat chilled chili to 165°F before hot holding. Discard perishables left without temperature control for more than 2 hours, or 1 hour when the weather is above 90°F. For more detail, see the USDA’s tailgating food safety guide.
