Cajun Roasted Potatoes: Oven and Air Fryer Methods

For crisp, evenly browned Cajun roasted potatoes, cut the pieces evenly, dry them well, coat them lightly with oil and seasoning, and leave space around them. The draft oven method uses 425°F; the draft air-fryer method uses 400°F in uncrowded batches.

Ingredients

  • 2 pounds Yukon Gold, baby red, or other small potatoes
  • 2 tablespoons olive oil or another neutral cooking oil
  • 1 1/2 to 2 teaspoons Ragin' Cajun y'ALL Purpose Seasoning, divided
  • 1 tablespoon chopped parsley or sliced green onion, optional

Method

Oven method

  1. Heat the oven to 425°F and set out a rimmed sheet pan.
  2. Scrub, cut into roughly 1-inch pieces, and dry the potatoes.
  3. Toss with oil and 1 1/2 teaspoons seasoning.
  4. Spread in one layer with cut sides toward the pan.
  5. Roast 20 minutes, turn, then roast another 10 to 15 minutes.
  6. Stop when browned and fork-tender; taste before adding more seasoning.

Air-fryer method

  1. Preheat to 400°F if the appliance requires it.
  2. Prepare, oil, and season the potatoes as for the oven method.
  3. Arrange one uncrowded layer and cook in batches.
  4. Air-fry 16 to 20 minutes, shaking after 8 to 10 minutes.
  5. Stop when browned and fork-tender; taste before adding more seasoning.

Why potatoes stay soft

Moisture and crowding are the usual culprits. Dry the cut potatoes before adding oil, use a pan or basket large enough for one layer, and let the first side brown before turning. Keep the pieces close to the same size so they finish together.

Do I need to peel the potatoes?

They may be wet, crowded, or turned before the first side browned. Dry them, keep them in one layer, and leave the first side undisturbed.

Can I make them in an air fryer?

Yes. Use uncrowded batches, shake halfway through, and judge doneness by browning and a tender center. Timing varies by appliance.
