Cajun Rice Dressing with Ground Beef

Rice dressing earns its place at the table in two ways: as a savory side beside fried fish, or as a bowl of its own with greens. Browning the beef first gives the seasoned rice a good start; the covered simmer and short rest finish the job.

Ingredients

  • 1 package Ragin’ Cajun Authentic Rice Dressing Mix (8 oz)
  • 1 pound ground beef
  • 2½ cups water, beef stock or broth
  • 2 tablespoons butter
  • 1 tablespoon olive or vegetable oil, optional
  • Sliced green onion or chopped parsley, optional, for serving
  • Hot sauce, optional, for serving

Stovetop method

  1. Brown the ground beef in a 3-quart saucepan over medium heat, breaking it into small crumbles. Check the meat with a food thermometer: ground beef must reach 160°F. Carefully drain excess rendered fat if needed.
  2. Stir in the water, stock or broth, rice dressing mix, butter and optional oil. Bring to a boil.
  3. Cover, reduce the heat to low and simmer for 25 minutes or until the rice is tender. Keep the lid in place during the simmer; check the rice at the end.
  4. Remove from the heat. Let the pot stand, covered, for 5 minutes, then fluff gently with a fork.
  5. Serve with green onion, parsley or hot sauce if you like.

Choose the meat and liquid before you start

The box also allows 1 pound of ground pork or turkey. Brown either before adding the mix, and use the temperature listed in the recipe’s safety note. The illustrated version uses ground beef.

Three choices that shape the pot

Ground pork or turkey Replace the beef with the same 1-pound amount. Cook the meat thoroughly first; turkey needs a higher safe temperature.

Get tender rice without overworking it

If the rice is firm: check whether liquid remains. Keep cooking gently, covered, until the rice is tender. If the pot is drying out, add a little water before continuing; do not turn up the heat to hurry it.

If the rice looks wet: give it the full off-heat rest before judging the texture. Fluff with a fork instead of stirring vigorously, which can break the grains.

If the bottom catches: lower the heat. Avoid scraping a scorched layer into the rest of the dressing. A close-fitting lid and gentle simmer help retain the cooking liquid.

No. The 25 minutes is the covered simmer. Brown the meat and bring the liquid to a boil first, then allow the 5-minute rest afterward.

Do I need to add plain rice?

No. Use the contents of the 8 oz rice dressing mix as directed; the recipe does not call for extra rice.

Can I use a pressure cooker?
