Cajun Fried Okra with Seasoned Breading

Start with fresh okra

Use 1 pound fresh okra, trimmed and cut crosswise into 3/4-inch pieces. Rinse the whole pods, dry them well, then blot again after cutting. The goal is a dry surface for the coating, while the center stays tender.

This recipe is written for fresh okra. Frozen okra, other cut sizes, oven cooking, and air-fryer cooking need their own method.

Ingredients

  • 1 pound fresh okra, cut crosswise into 3/4-inch pieces after trimming
  • 5 tablespoons Ragin’ Cajun y’ALL Purpose Breading Mix, for the wet batter
  • 1/3 cup cool water
  • 1 1/4 cups Ragin’ Cajun y’ALL Purpose Breading Mix, for the dry coating
  • Up to 1/4 cup additional y’ALL Purpose Breading Mix, optional clean reserve
  • Neutral oil, for frying
  • Cajun Remoulade Sauce, optional, for serving

Prepare the okra and bowls

  1. Rinse the fresh okra and dry it thoroughly. Trim the stem ends without cutting deeply into the pods, then cut crosswise into 3/4-inch pieces. Spread the pieces out and blot again. Divide into about four 1/4-pound portions for batch planning; use smaller portions whenever the pieces need more room.
  2. Whisk 5 tablespoons breading mix with 1/3 cup cool water until no dry pockets remain. Put 1 1/4 cups dry mix in a separate shallow bowl or tray. Measure the optional reserve into its own clean container before coating, if using.
  3. Set a wire rack over a sheet pan for draining. Use fresh coating and clean bowls and utensils, separate from any raw-chicken or seafood station.

Coat and fry

  1. Dip a small handful of okra in the wet batter. Lift it with a slotted utensil and let the excess drain back into the bowl.
  2. Move the pieces to the dry bowl. Keep them loose and press coating onto the cut faces and green sides.
Separate cut okra pieces in a shallow breading tray, with a fork turning one piece.
Keeping the pieces loose in the dry bowl prevents a coated clump from reaching the oil.
  1. Add about 1 inch of oil to a deep heavy skillet or pot, keeping oil and food well below the vessel’s halfway point. Heat to 350°F.
  2. Fry about 1/4 pound at a time, or less if the pieces cannot move separately. Plan on about four batches. Allow about 2–4 minutes per batch, stirring or turning as needed, until the coating is crisp and the center is tender. Check a piece from the batch and keep cooking until its center is tender.
  3. Transfer each batch to the rack and let the oil return to 350°F before continuing. Serve promptly with optional sauce on the side.

After cooking

Refrigerate leftovers within 2 hours, or within 1 hour above 90°F. Use within 3–4 days and reheat to 165°F.

Three things that help

Pieces sticking together? Work with a smaller handful in the coating bowl and a smaller batch in the oil.

Coating soft or greasy? Blot the cut pieces, let excess wet batter drain, and avoid crowding the oil.

Crust brown but center firm? Check the 3/4-inch cut size and 350°F oil, then cook until a piece from the batch has a tender center.

Serve in small batches

Bring out each batch as it drains; a covered bowl traps steam and softens the crust. Keep sauce separate.

Common questions

Should I rinse after slicing?

No. Rinse the whole pods before cutting, then blot the pieces so you do not add water back to the surfaces you are about to coat.

Can I fry it all at once?

No. Plan on about four 1/4-pound batches, using smaller batches whenever needed to keep the pieces separate.
