  4. Transfer the first batch to a clean platter and repeat with the second batch. Rest each batch for 3 minutes, then serve while crisp.
Food-safety note Cook chicken wings to 165°F in the meatiest part without touching bone. Refrigerate leftovers within 2 hours, or within 1 hour when the air temperature is above 90°F, and reheat to 165°F.
