What does roux do in gumbo?

How do you dissolve jar roux without clumps?

  1. Measure the water and roux called for by the complete recipe.
  2. Combine them while the water is cool or warm enough to work safely, following that recipe's order.
  3. Whisk until no pockets of roux remain.
  4. Scrape around the bottom and side of the pot, where denser pieces can hide.
  5. Continue only when the liquid looks even rather than streaked.

If a clump remains, press it against the side of the pot with the back of a spoon and whisk it back through the liquid. Do not wait until the finished gumbo is ready to serve to solve the foundation.
