Cajun’s Choice Blackened Seasoning
1 teaspoon Cajun’s Choice Creole Seasoning
4 medium size fish fillets
2 tablespoons vegetable oil
2 tablespoons unsalted butter
2 cups sliced mushrooms
2 cloves minced garlic
1/4 cup chopped green onions
1/2 lb. uncooked, cleaned small shrimp
1/4 cup white wine
Generously sprinkle Cajun's Choice Blackened Seasoning
on fish fillets. Heat vegetable oil in a skillet. Cook fillets about 2 minutes per side until fish begins to flake when touched with a fork. Remove from heat to a warm dish. While the fish is cooking, melt butter in a medium skillet. Add mushrooms, garlic and onions. Cook about 5 minutes over med-high heat until wilted. Stir in shrimp and Cajun's Choice Creole Seasoning. Sauté 3 to 4 minutes. Add wine and cook until liquid reduces slightly. Serve this mixture over fish. This dish is excellent served with rice pilaf and/or fresh vegetables
