1/4 cup vegetable oil
1/3 cup of bell peppers
1 1/2 cups of chopped onions
1/3 cup of chopped celery
2 lb chicken breast
1 lb smoked sausage
Served with rice
In a separate skillet add ¼ cup of vegetable oil and sauté 1/3 cup bell peppers, 1½ cups chopped onions & 1/3 cup chopped celery. Once onions are "see through" add to the boiling water/stock.
Cut, season and brown the smoked sausage in separate pan/skillet then add to the boiling water, repeat with the chicken. Season water to taste with Ragin’ Cajun Original Cajun Seasoning. Cook on a low boil for 60-90 minutes.
Serve over steamed rice. Serves 6-8
